Recipe of the week - Breakfast Burritos

This week's best deal was $1 land O Lakes eggs at Stop and Shop.  Stop and Shop also had Chi Chi's tortillas on sale for 2 for $3 but with the $1 of two coupon they were just $1 a bag.  My son loves breakfast burritos and I love to make them for him because it clears out my fridge of leftovers.

Breakfast Burritos

1dozen eggs scrambled
diced tomatoes
diced green peppers
chopped cooked sausage or bacon or chicken
shredded cheese
 1 package of tortillas

In one pan, crack open your eggs and scramble them.  Always cook your eggs well to prevent salmonella.

In a second pan, toss green peppers, tomatoes, meat until warm.

Assemble burritos by laying tortilla flat then a layers of eggs, a layer of veggie and meat and finished off with a sprinkle of cheese.  Wrap up your burrito and enjoy.

Should feed 4-5 nicely for breakfast.

This is a great way to get a hearty breakfast and use up some leftovers from the week.  The main two ingredients 1 dozen eggs for $1 and one package of tortillas for $1 then add in the extra cost of leftovers for about $2.50 and you get a great breakfast for your family for only $4.50.
