Recipe of the Week - Cereal Treats

Over the past two weeks there has been some really great cereal sales.  Traditional cereal treats are made out of rice krispies but using different kinds of cereal can be just as fun!  Here is the original recipe according to Kelloggs.

Cereal Treats

3 Tbs of Butter

1 10 ounce bag of Marshmallows

6 C cereal 

Microwave the butter and marshmallows for 1 minute and stir. Then microwave in 30 second intervals until all marshmallows are melted. 

Add in your favorite cereal add stir.  Don't be afraid to mix in more then one cereal for an even yummier snack.

Try using cookie cutters to mold them into shapes.

Cool them in the fridge for best results.

This week at Shoprite Rice Krispies are on sale for $1.99 along with Froot Loops.  There is a digital coupon at Shoprite for $2 off any two boxes of Kelloggs cereal.  Use this with a $1 off two boxes printable coupon from Kelloggs and you get two boxes for $1 or $0.50 a box.  Last week Kix and Trix cereal was on sale for $1.88.  There were digital coupons and paper coupons available for those as well.  Kix ended up being free with Shoprite paying you $0.38 and the Trix ended up being $0.38 a box.  Marshmallows are $1.50 a bag and butter was $1 last week or $2 this week with coupons.  Anyway you decide to do it these treats are fun for the kids to makes and eat for a low price.  Lets say $0.50 for a box of cereal (most likely less!), $0.25 for butter, and $1.50 for marshmallows makes it only $2.25 for a fun treat to make and eat!

A&P Sorrento Cheese Sticks

This week A&P has Sorrento cheese sticks buy one get one free.  There are $1 off one coupons from about a month ago.  Even though one of your cheese sticks are free you can still use two coupons, one for each package.  Unfortunately I don't know the starting price for the cheese sticks but if you have two coupons it will be an excellent deal for cheese sticks.

Stop and Shop Huggies Deal

This week Stop and Shop has a deal where if you buy $30 worth of Huggies you will get a $10 of your next order coupon.  There were $2 and $1.50 off Huggies diaper coupons in this week's Sunday insert.  There were also $0.50 off wipes and $0.75 off Pull up wipes.  There was a $2 off Pull ups coupon as well.  Mix and Match to get the best deal for your family.  Don't forget to make sure your coupon prints out at checkout.

Shoprite Kraft, P&G, Unilever, Tyson, General Mills group deal

This week Shoprite is having a group deal where if you buy $75 worth of Kraft, P&G, Unilever, General Mills and Tyson products then you get a $25 gift card for free.  This is such a huge selection of products that I can't navigate a best way to get your savings.  Just remember that you must reach $75 after you deduct your coupons.  Keep a running total while you are shopping and make sure to count those coupons so you hit $75.

Shoprite Goya Baked Beans

Shoprite has Goya Baked Beans for $0.69 a can.  There is a coupon in the Shoprite circular this week for $0.50 off one can.  This makes your beans only $0.19.

Shoprite Kelloggs Raisin Bran

This week Shoprite has Raisin Bran on sale for $1.99.  There is a printable coupon for $0.50 off one box at Kelloggs.  This coupon will double to make your box of Raisin Bran only $0.99.

Shoprite Kelloggs Crunchy Nut Cereal

This week Shoprite has Kelloggs Crunchy Nut Cereal on sale for $1.99.  There were $0.70 off one coupons available a few weeks ago but now there are $0.50 off one printable coupons available from Kelloggs.  Shoprite also has a $0.70 off one digital coupon available.  If you have a $0.50 off one coupon it will double to $1 and then add in the $0.70 digital coupon and your box of cereal will be $0.29.  Remember this will only work for one box of cereal.  If you are lucky enough to still have a $0.70 off one coupon then Shoprite will actually give you $0.11 towards the remainder of your groceries.

Recipe of the Week - Strawberry Shortcake

School is at an end and temperatures are rising, this can only mean summer is here!  When I think of summer one of my first thoughts is Strawberry Shortcake.  In fact while I was shopping yesterday I picked up strawberries with this in mind.  Thanks to Williams Sonoma here is a quick and easy recipe for authentic shortcake to go with those yummy berries. 

Strawberry Shortcake

Strawberries, hulled and sliced

1-2 Tbs of Lemon Juice

5 Tbs Sugar

1 C Flour

1 1/2 tsp baking powder

4 Tbs Cold Butter

1.  Wash, hull and slice strawberries and place in a bowl.  Add 1-2 Tbs of lemon juice and 2 Tbs of sugar and stir until all berries are covered in lemon juice and sugar.  Set aside in the refrigerator until you are ready to serve. 

2.  Pre-heat oven to 425 and get a cookie sheet ready.

3.  Mix together flour, 3 Tbs sugar, and baking powder.  Next cut in 4 Tbs of butter into the dough.  Using a food processor or mini prep or fork blend the butter and flour mixture until you get little pea sized crumbs.

4.  Using your hands mold the dough.  I use a round cookie cutter but you can always just eyeball it and make your own shapes with your hands. Make your shortcakes about a inch thick.  Place them on the cookie sheet.  Cook for 12 - 15 minutes.

5.  Once done let them cool for 10 minutes.  

6.  Pull your strawberries out of the refrigerator, they should now be macerated.  Cut your shortcake in half and place strawberries on top.  Then finish off with some whipped cream.

I love to make my own whipped cream but if you have cool whip or reddi whip on hand you might as well use it.  If you want to try and make the whipped cream here is what you will need.

Whipped Cream

1 C heavy cream

3-6 Tbs of sugar

1 tsp of vanilla

Using a whisk attachment or a hand mixer combine cream, sugar and vanilla in a bowl.  When adding your sugar use at least 3 Tbs but more if you want your whipped cream sweeter.  Mix our whisk on high until you have a thick whipped cream in your bowl.

I chose this recipe since strawberries are abundant this time of year and readily available.  I picked up some organic strawberries at Stop and Shop for $3.99.  Conventional were $2.99.  Land O Lakes Butter is on sale this week at A&P and with the coupons is only a $1 a box.  Everything else is a common pantry item.  Let's add up the cost $3.99 Strawberries, $0.25 butter used in recipe, $1 of pantry items, $0.50 lemon, if you needed to buy one.  This means your scrumptious dessert cost you $5.74 for a family of five or $1.14 per person.

Recipe of the Week - Taco Casserole

This is a favorite in our house especially because my picky eaters claim they do not like tacos yet love taco casserole! 

Taco Casserole

1 pound ground beef 

1 can diced tomatoes

1 can diced green chiles

1 box elbow macaroni

1 package of taco seasoning

1 bag of shredded cheese

1. Set oven to 375.  Begin to brown hamburger on stove.

2. While browning beef bring, cook pasta.

3.  Once beef is browned put diced tomatoes, green chiles and taco seasoning in with the beef and stir.  Turn heat to low and let simmer.

4.  Once pasta is done cooking, strain in the sink and pour pasta back into pot.  Then add the beef and vegetable mixture to the pasta and stir.  Finally add about 1 cup of shredded cheese to the mixture and stir.

5.  Pour the complete mixture into an oven safe bowl and top with shredded cheese.  Cook for about 20-25 minutes until cheese is melted.

This is so yummy and easy to make.  One pound of beef costs about $7.  The chopped green chiles are on sale this week at Stop and Shop for $1.50 a can.  The Taco Seasoning is also on sale this week at Stop and Shop for $0.69 a packet.  Both of these products are Ortega Brand and there is a $0.50 off any two Ortega products from the Sunday insert few weeks ago.  This makes your chiles and taco seasoning only $1.19.  Sargento shredded cheese is on sale this week for $2 a bag.  The pasta is $0.20 a box from the Barilla sale in May, the diced tomatoes are $0.43 a can from the Del Monte sale in May.  Total this meal costs $10.82 and feeds a family of five easily.  A hearty, filling meal for $2.16 a person.
